A burger is only as good as its crust. Everything else at Bun Theory follows from that.

Bun Theory opened in 2021 as a two-night-a-week counter with one flat-top and a line out the door. We were not trying to reinvent the burger. We were trying to make the one you remember from the best night out you ever had, every single time.
That meant smashing the patty instead of pressing it, toasting buns in butter, frying everything to order and keeping the menu short enough that nothing waits around. Those are still the rules. They are printed above every flat-top we own.

Every beef patty is smashed hard on a ripping-hot flat-top for a lacy, crunchy crust. Thirty seconds a side, cheese on, done.
Potato buns from a bakery three streets away, delivered before we open and toasted in butter on the same flat-top.
Nothing sits under a heat lamp. Fries are twice-cooked when you order, chicken goes in the fryer when the ticket prints.
Our peri-peri glaze comes in mild, medium and fiery. Fiery is genuinely fiery. We will warn you once.
2021
A rented counter in Indiranagar, open Friday and Saturday nights only. Forty burgers a night, sold out by nine. The theory: crust is everything.
2022
We stopped buying buns in bags. A neighbourhood bakery started baking potato buns to our spec, delivered before 11 every morning.
2023
Second kitchen, first terrace. The pickup window on the lane became the busiest two square metres in the company.
2025
Third kitchen, built for speed. Order-ahead went live and the queue got shorter even as the numbers got bigger.
