Our story
A small room, a short menu and a kitchen that cooks the way people have always cooked: slowly, over flame, with what the season allows.

Chapter 1
Maison Ember opened in 2019 in a former printing house on Lavelle Road. The press came out; the brick oven and open hearth went in. The dining room was designed around them so that every table has a line of sight to the fire.
We seat forty-two guests. That number has not changed and will not. It is the size at which a kitchen can still cook each plate as if it were the only one.

Chapter 2
Chef Arjun Mehra trained in Lyon and Copenhagen before returning to Bengaluru. What he brought back was not a cuisine but a discipline: taste everything, season at every stage, and never add an element that does not earn its place.
Our dishes tend to have three or four components. The craft is in the sourcing, the fire and the timing rather than the garnish.

Chapter 3
We work directly with eleven growers within a few hours of the city, a dairy in Coorg, and two fishing families on the Karnataka coast who call us the morning they land. The menu is written each Monday after those calls.
Everything that can be made in-house is: butter, bread, charcuterie, vinegars, and the ferments that run through the tasting menu.
Sourcing
We would rather know a farm well than a wholesaler slightly. Every supplier has stood in our kitchen; most of them have eaten here.

Chef & Co-founder
“Fire is the oldest technique in cooking and still the hardest to master. Everything on our menu passes through the hearth at some point, even if only for a moment.”
